Mama's Mussels Italian Preparation time: 10 minutes Total cooking time: 15 minutes Serves 2-3 1.5 kg (3 lbs) PEI Mussels 540 mls of canned Italian stewed tomatoes 1/2 cup white wine 1/2 tsp hot red pepper flakes 1/2 cup parsley, chopped In a large saucepan, combine all ingredients except mussels Boil uncovered, stirring often until thick (about 5 minutes) Add mussels, cover and cook over medium heat, stirring once until mussels open (8-10 minutes) Recipe courtesy of Confederation Cove Mussel Co.
